Ingredients
Fresh Babylonia Areolata 500g (washed), Fermented black beans 1 tablespoon (washed and mashed), 1 red bell pepper (cut into strips), 1 onion (cut into strips), 2 cloves garlic (minced), 2 spring onion (chopped), 1 tablespoon soy sauce, 1 teaspoon sugar, 1 teaspoon sesame oil, 2 tablespoons vegetable oil, 1 tablespoon Shaoxing wine (optional, according to preference)
Instructions
- Soak the clams in water with salt for about 30 minutes to remove the sand, then wash thoroughly.
- Heat water in a pot and cook the clams for about 1-2 minutes until it opens. Drain and set aside.
- Heat vegetable oil in a pan and stir-fry the minced garlic and fermented black beans over medium heat for about 30 seconds.
- Add the onion and red bell pepper and pan-fry for about 2 minutes.
- Add the Babylonia areolate, soy sauce, sugar, Shaoxing wine and pan-fry for about 3-4 minutes until the flavors are absorbed.
- Top with sesame oil, garnish with the chopped spring onions, and serve.
