Ingredients

Fresh Babylonia Areolata 500g (washed), Fermented black beans 1 tablespoon (washed and mashed), 1 red bell pepper (cut into strips), 1 onion (cut into strips), 2 cloves garlic (minced), 2 spring onion (chopped), 1 tablespoon soy sauce, 1 teaspoon sugar, 1 teaspoon sesame oil, 2 tablespoons vegetable oil, 1 tablespoon Shaoxing wine (optional, according to preference)

Instructions

  1. Soak the clams in water with salt for about 30 minutes to remove the sand, then wash thoroughly.
  2. Heat water in a pot and cook the clams for about 1-2 minutes until it opens. Drain and set aside.
  3. Heat vegetable oil in a pan and stir-fry the minced garlic and fermented black beans over medium heat for about 30 seconds.
  4. Add the onion and red bell pepper and pan-fry for about 2 minutes.
  5. Add the Babylonia areolate, soy sauce, sugar, Shaoxing wine and pan-fry for about 3-4 minutes until the flavors are absorbed.
  6. Top with sesame oil, garnish with the chopped spring onions, and serve.
