Salmon dorsal fin is relatively thin and high in fat content, making it ideal for pan-frying until golden and crispy.

Ingredients

2 salmon dorsal fins (approx. 150g), A pinch of salt and ground black pepper, 1 tablespoon olive oil, 1 teaspoon lemon juice

Instructions

  1. Wash the salmon dorsal fins and wipe it dry with kitchen paper.
  2. Season evenly with salt and ground black pepper, and marinate for 5 minutes.
  3. Heat the frying pan, add olive oil, and pan-fry the salmon dorsal fins over medium heat until both sides are golden (about 2 minutes on each side).
  4. Finish by drizzling lemon juice and serve.

Cooking Tips

Avoid flipping too often while pan-frying to avoid it from falling apart.
