Ingredients

Prawns 500g (deveined, shells on), 1 teaspoon salt, 2 tablespoons corn starch, 1 teaspoon black pepper, 1 teaspoon white pepper, 3 cloves garlic (minced), 1 red chili (minced), 2 spring onions (chopped), 1/4 cup vegetable oil

Instructions

  1. wash and dry the shrimp. Coat with corn starch, salt, and half the black and white pepper and mix well.
  2. Heat oil in a pan and deep-fry the shrimp in batches over high heat for about 2-3 minutes, until golden brown and crispy, set aside.
  3. Leave 1 tablespoon oil in the pan and stir-fry the minced garlic, red chili, and spring onions for about 30 seconds.
  4. Add back the shrimp to the pan, with the remaining black and white pepper, and stir-fry for about 1 minute to serve.
