Ingredients

Fresh oyster meat 200g (washed), 2 tablespoons corn starch, 1/4 cup water, 3 eggs, 1 tablespoon soy sauce, 1 teaspoon white pepper, 2 tablespoons vegetable oil, 2 spring onions (chopped), chili sauce (to taste, according to preference)

Instructions

  1. Mix the corn starch and water into a paste. Add egg, soy sauce, and white pepper and mix well.
  2. Heat 1 tablespoon oil in a pan and stir-fry the oyster meat over medium heat for about 1-2 minutes, until slightly firm. Set aside.
  3. Add another tablespoon of oil to the pan, add the corn starch and egg mixture, and pan-fry for about 1 minute.
  4. Add the oyster meat and spring onions in the center of the egg and pan-fry for about 2-3 minutes, until golden brown and cooked through.
  5. Serve with chili sauce can be enhanced the flavor.
