Ingredients

1 yellowfin seabream (washed, gutted and scaled), 1 tablespoon salt, 1 tablespoon vegetable oil, 50ml water, 1 teaspoon fish sauce, 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sugar, 2 slices of ginger, 1-2 spring onions (chopped)

Instructions

  1. Wash and dry the fish.
  2. Spread the salt evenly over the fish and marinate for about 1 hour.
  3. Heat oil in a pan and fry the fish on both sides until golden brown and crispy.
  4. Add water and bring to a boil over low heat.
  5. Add fish sauce, soy sauce, oyster sauce, sugar, and ginger slices, cover the lip and cook for about 2-3 minutes until the fish is cooked through.
  6. Remove the lid and cook until the sauce thickens slightly. Garnish with spring onions and serve.
