Ingredients
4 fresh abalones about 200g (washed), 6 dried shiitake mushrooms (soaked and sliced), 2 slices of ginger, 2 cloves of garlic (minced), 1 tablespoon oyster sauce, 1 teaspoon soy sauce, 1 teaspoon sugar, 1 tablespoon Shaoxing wine, 1 cup chicken broth, 1 teaspoon corn starch (mixed with 2 tablespoons water), 2 tablespoons vegetable oil
Instructions
- Wash and slightly cut on the fresh abalone surface.
- Heat oil in a pan and stir-fry the ginger and minced garlic over medium heat.
- Add sliced shiitake mushrooms and stir-fry for about 2 minutes.
- Add abalones, oyster sauce, soy sauce, sugar, Shaoxing wine and chicken broth. Bring to a boil, then cover the lip and cook over low heat for about 20-30 minutes until tender.
- Add corn starch with water and cook for about 1-2 minutes until the sauce thickens.
