Ingredients

Thread fin 200g, 1 tablespoon vegetable oil, 1 tablespoon fermented black beans (chopped), 1 tablespoon garlic (minced), Ginger 10g (shredded), 1 tablespoon soy sauce, 1 teaspoon sesame oil, 1 tablespoon rice wine, 1 tablespoon spring onions (chopped), A pinch of shredded red bell pepper (for garnish)

Instructions

  1. Soak for about 30 minutes to remove any saltiness.
  2. Dry it with kitchen paper and place it on a steaming plate.
  3. Heat oil in a pan and sauté the fermented black beans and minced garlic for about 30 seconds until golden brown. Turn off the heat.
  4. Spread the stir-fried fermented black beans and minced garlic evenly over the fish and sprinkle the shredded ginger.
  5. Drizzle soy sauce, sesame oil and rice wine.
  6. Add water and bring it to a boil. Add the fish and steam over high heat for about 8-10 minutes until cooked through and flavorful.
  7. Remove steamed fish from the pan and pour off excess water from the plate.
  8. Garnish with spring onions and shredded red pepper, and serve.
