Ingredients

Spotted Scat 400g (washed and gutted), A pinch of salt, Low-gluten flour 100g, Corn starch 50g, 150ml soda water, 200ml oil, 1 teaspoon salt and pepper, A pinch of green and red bell pepper (diced)

Instructions

  1. Wash and dry the fish.
  2. Cut into pieces, sprinkle lightly with salt, and marinate for about 15 minutes.
  3. Mix low-gluten flour, cornstarch, and soda water to make a batter. Refrigerate for 30 minutes.
  4. Heat oil in a wok to about 170°C. Coat the golden drum with the batter and deep-fry in batches for about 3 minutes until golden brown and crispy.
  5. Drain the oil, sprinkle with salt and pepper, and simmer with green and red chili peppers. Shake well and serve.
