Ingredients
Fresh razor clams 500g (washed), 1 red chili pepper (chopped), 3 cloves garlic (minced), 1 tablespoon spring onion (chopped), 2 tablespoons rice wine, 1 tablespoon soy sauce, 1 teaspoon sugar, 1 teaspoon sesame oil, 2 tablespoons vegetable oil
Instructions
- Soak the razor clams in water with salt for about 60 minutes to remove the sand, then wash thoroughly.
- Heat vegetable oil in a pan and stir-fry the minced garlic and fermented black beans over medium heat for about 1 minute.
- Add the razor clams, rice wine, soy sauce, and sugar, and cover the lid cook for about 5-7 minutes, shaking the pan gently to allow each razor clams to open.
- Discard any unopened razor clams. Top with sesame oil, and sprinkle with chopped spring onions, and serve.
