Ingredients

Salmon Collar 200g, 1 tablespoon miso paste, 1 teaspoon sake, 1 tablespoon mirin, 1 teaspoon sugar

Instructions

  1. Make the sauce by mixing the miso paste, sake, mirin, and sugar. Spread it over the salmon collar and marinate for 30 minutes, set aside.
  2. Preheat the oven to 180°C. Place the salmon collar on baking tray with tin foil and bake for about 10 minutes, or until the surface of salmon is slightly charred.
  3. Remove from the oven and garnish with chopped spring onion to serve.

Cooking Tips

If you don’t have an oven at home, you can use a frying pan to pan-fry the salmon over low heat until slightly charred, then cover with a lid to let it cook through. This will also bring out the tenderness and aroma.
