Positioned near the belly, the salmon collar is rich in fat and delicately tender. After marinating miso and baked to perfection, the salmon oil and miso creates a rich, savory aroma that's truly unforgettable.
Ingredients
Salmon Collar 200g, 1 tablespoon miso paste, 1 teaspoon sake, 1 tablespoon mirin, 1 teaspoon sugar
Instructions
- Make the sauce by mixing the miso paste, sake, mirin, and sugar. Spread it over the salmon collar and marinate for 30 minutes, set aside.
- Preheat the oven to 180°C. Place the salmon collar on baking tray with tin foil and bake for about 10 minutes, or until the surface of salmon is slightly charred.
- Remove from the oven and garnish with chopped spring onion to serve.
Cooking Tips
If you don’t have an oven at home, you can use a frying pan to pan-fry the salmon over low heat until slightly charred, then cover with a lid to let it cook through. This will also bring out the tenderness and aroma.
