Ingredients

1 bigeye snapper about 600g (washed and scaled), 4 cloves garlic (minced), 2 tablespoons soy sauce, 1 tablespoon rice wine, 1 teaspoon sugar, 2 tablespoons vegetable oil, 1 spring onions (chopped)

Instructions

  1. Wash and dry the fish, slightly cut the surface on both sides. Sprinkle a little bit of salt.
  2. Heat oil in a pan and fry the fish over medium heat for about 4-5 minutes per side until golden brown and crispy.
  3. Stir-fry minced garlic in the same pan until fragrant, add soy sauce, rice wine, and sugar and bring to a boil.
  4. Pour the sauce over the fish and cook for about 1-2 minutes.
  5. Garnish with spring onions and serve with rice.
